What does "Reserve" mean?

‘Ohana Reserve refers to our aged venison line. All fresh cuts have been aged for 14 days under controlled conditions to improve tenderness, flavor, and cookability.

What makes aged venison different?

Aging softens muscle fibers, enhances savory flavor, and improves moisture retention during cooking. The result is a more forgiving, flavorful cut.

Are all cuts aged the same way?

All cuts are aged for 14 days, except ground, which is aged for 3.

Is aged venison still wild-harvested?

Our sourcing model has not changed. All of our venison is—and always will be—field-harvested under USDA inspection.

Does aging affect nutrition or safety?

Absolutely not. The process does not reduce the nutritional profile or shelf life. In fact, research on aged red meat suggests it may help preserve the meat’s nutritional integrity and could make some nutrients more bioavailable.

How should I cook aged venison?

Best methods: cast-iron sear, reverse sear, or sous-vide with sear finish. Avoid high-heat grilling without temperature control.

Do I need to adjust my recipes?

In most cases, no. Aging softens muscle fibers naturally. Especially for cuts like sirloin or leg medallions, traditional tenderizing methods—whether marinating, piercing, or pounding—should be reduced or skipped to avoid over-softening the texture.

Will I still get the same cuts I’m used to?

Some former cuts are being reintroduced in aged form. Others may rotate seasonally.
